Crush shelled pistachios to approx. 1/8"-1/4" and set aside.
1/2 cup Shelled Pistachios
In a large bowl, mix honey and peanut butter together until you have a smooth consistency.
1 cup Honey, 1 cup Natural Peanut Butter
Add oats and flaxseed.
3 cups Old Fashioned Oats, 1/2 cup Flaxseed
Add chocolate chips and nuts and mix by hand.
1 cup Mini Dark Chocolate Chips
Roll into golf ball sized balls.
Dip in wheat germ.
1/4 cup Wheat Germ
Place on a cookie sheet lined with wax paper.
Refrigerate overnight.
Freeze extras in a zip lock freezer bag to save for a few weeks.
Eat and enjoy!

If you feel they get too sticky and hard to form, try to refrigerate them again.- Mini dark chocolate chips can be difficult to find.
